Paleta Lolly C+

Behind Kalan is Hanno, who left his job at a Swiss multinational in 2017 to learn the paletero's craft from a Mexican ice cream master before setting up his own workshop in Lausanne. Everything is made by hand – fruit purées, syrups, wafers, brownies – with 60% ingredients from Vaud and organic dairy from Le Sapalet in Rossinière.
