Quince tastes citrusy but milder, without the sharpness of lime or lemon. So it lifts other flavours – the fruitiness of a tagine, the lemony note of an apple tart – or shines on its own, slow-cooked until soft and pink (as its yellow flesh turns when stewed), with seasonal spices.
