However, when cooked, the artichoke's nutty flavour prevails. Steaming or boiling an artichoke reveals otherwise hidden natural flavours, softening the bitterness and giving the heart of the artichoke its ‘buttery’ mouthfeel which, ironically, goes very well with butter.
